First off: this thing just plain works! It will put an impressive blade on your straight edged knives, no matter how old or useless they are now. I use it mainly for kitchen knives which I think is what it’s mainly designed for (considering it’s Chef’s Choice) but it’s also apparently very good on any other form of knife, such as butcher and sporting knives.
It’s easy to use and convenient. It doesn’t take much to run my knives through the device quite regularly just to keep them in peak condition. After I used the machine for the first time to drastically improve my knives, now just a quick slide through the device on the lowest setting seems to be enough.
It’s also a pretty cool looking product. The main thing that really matters obviously is whether it does the job or not, but it’s an added bonus when it’s aesthetically pleasing too. The build quality of it is in line with the price, so no real concern there. Although it’s name conveys “professional”, I wouldn’t go that far and would pass that off simply as marketing. For home use though – and for the average persons needs – the Chef’s Choice 120 is more than adequate.
As for the not-so-good, I’ve found that the device is not really suitable for serrated blades, such as bread knives. It’s advertised as being able to do any form of knife – including serrated blades – but I haven’t found that to be the case. For straight blade, amazing, but for serrated blades, don’t get your hopes up. I’ve also noticed that the sharpener leaves very fine scratches on the knives after they’ve been used on the device. This isn’t a turnoff for regular working knives, but if you have knives for show, then you’re better off taking them elsewhere.
In conclusion, for the overall results that this thing gives, it’s more than worth the money. It exceeded my expectations in that respect and for most people, the Chef’s Choice will be perfect. If I had show knives, then I wouldn’t let them near this, but even then, that’s being very picky. If you want to get your straight edged functional blades up to an unimaginable sharpness, then the Chef’s Choice 120 will exceed your expectations and give you a result you’ll be happy with. For the regular persons kitchen, it’s hard to put this thing at fault. Get it while you still can, definitely recommended.
